Day one of the Friendly Challenge DONE. It’s not a diet and I’m not restricting myself (Case in point in this recipe!) For 30 days, I’m following a whole foods plant-based diet, which I recommend to everyone. The evidence is compelling that it’s the ideal way of eating for everyone. For people that have not read, ‘How Not to Die’ by Dr. Michael Gregor, I would definitely recommend it.
While I already avoid animal products and eat a healthy diet with tons of fruits and veggies, I LOVE food. Bread, pastas, baked treats – ALL THE GOOD STUFF. SO naturally, when I do a whole foods plant-based-only challenge, I do my best to not restrict myself. Enter these Walnut Truffle Brownies!
How do you make no bake Chocolate Truffle Brownies?Â
They are incredibly simple. All you need is a food processor and these ingredients: Walnuts, cacao powder, dates, maple syrup and a pinch of salt. Just throw all the ingredients in a blender and blend until you receive a fudge like consistency.

Some might argue against maple syrup. I mean, technically it’s not ‘raw’. But, maple syrup is more or less unrefined, contains good nutrients, and I’m Canadian so I have to use it, right? Feel free so substitute it for raw agave or leave it out completely.

Walnut Truffle Brownies
Equipment
- Food Processor
Ingredients
- 2 cups walnuts
- 1/2 cup cacao powder + extra for dusting
- 10 medjool dates
- 1 tbsp maple syrup
- pinch of salt
Instructions
- In a food processor, combine all ingredients until a smooth, fudge-y consistency
- Roll into 1 tbsp balls. Refrigerate until firm.
- Coat with cacao dusting.
- Enjoy!
