Who doesn’t love a good guacamole? And who doesn’t love a good hummus?? Enter: Lima Bean Guacomole. I promise this recipe will not disappoint. It has all the mexican goodness of good ol’ guac and has the heartiness of hummus. Except this hummus is made with Lima beans. It seems like Lima beans are being overshadowed by chickpeas, which is unfortunate because they are SOO GOOD!

They look pretty much identical to an edamame bean, but have a bit more of a nutty/bean taste if that makes sense. Anyways, next time you’re at the market, and you come across some Lima Beans, think of me and grab some! And then head straight to your kitchen and make this recipe.

It pretty much doesn’t get any easier than this. Just throw everything into your food processor and let it mix. I bought giant rye crackers last time I was at IKEA. (Side note: their food market is getting much more plant-based friendly) If you don’t have rye crackers, you can eat this with literally anything. Crackers, toast, carrot sticks, celery, or with a spoon!

Lima Bean Guacamole

Delicious alternative to hummus, and added protein to your guac!

Ingredients

  • 1 cup lima beans
  • 2 avocados
  • 1 lime juiced
  • 1 tsp salt
  • pepper to taste

Instructions

  • Blend all ingredients in blender until smooth.
  • Enjoy on crackers, veggies, or on toast.
