I’m guessing mostly everyone has heard of Buckwheat. Maybe just from the movie The Little Rascals? Buckwheat Groats are the seeds from a buckwheat plant! And yes, buckwheat is a seed, and not actually ‘wheat’. Confusing, right?


Absolutely. I wouldn’t have a blog post dedicated to it if it weren’t. It is a far overlooked food. There are about a gazillion ways to use buckwheat. You can cook it like porridge, eat it raw, and I’ve recently made an indian stew with it! You can also grind it in a high speed blender to make flour (Hint: Buckwheat waffles). Traditionally, they say to soak the buckwheat overnight in order to make it more digestible. Hence, this recipe!

You could use regular oats, but the KEY to a healthy diet is eating a large variety of different plant foods in order to ensure your body gets what it needs. Buckwheat’s benefits are astounding. It’s gluten free, high in protein and fiber, good for your heart health, and touted for its blood sugar control.


Basically the same as overnight oats! Just throw your ingredients into a container, top with your favourite plant-based milk, and voila. At the beginning of the work week, I like to make 3-4 of these so I can just throw it into my lunch bag and enjoy it while catching up on my emails.

My other tip is to always throw in a tablespoon of chia seeds. Not only are you adding an excellent source of Omega 3 EFAs, but the chia seeds help bind it all together.

  • 1/4 cup buckwheat groats
  • 3/4 cup strawberries, sliced fresh or frozen
  • 1 tbsp chia seeds
  • 1 tbsp coconut flakes
  • 1 tbsp pumpkin seeds
  • 3/4 cup plant-based milk
  • 1-2 drops stevia extract optional


  • In a small mason jar or container, combine all ingredients. Let sit overnight and enjoy!
