How do you make Vegan Ginger Molasses Cookies?

The process is basically the same as non-vegan cookies. However, the first step in vegan baking is almost always soaking your egg substitute if you’re using ground flaxseeds or chia seeds. In this recipe, I use ground flaxseed. One egg usually equals 1 tablespoons of ground flaxseed to two and half tablespoons of water. Let it soak for about five minutes while you’re prepping the other ingredients!

Just like regular cookies, you will need to cream the wet ingredients – oil, sugar, molasses, apple sauce, ginger, and vanilla extract.

In a large bowl, combine the dry ingredients. Then, slowly add the dry ingredients to the wet ingredients.

Do you need to chill Ginger Molasses dough?

Not in this recipe! I tested this recipe multiple times. My coworkers were very happy about this. I chilled the dough the first time, and then skipped that step the second time. Skipping the chilling actually make the cookies flatten into perfect cookie shapes. And you save time – so win/win!

After you have mixed the dough, roll into small golf balls, and cover in sugar. Place on parchment or silicone lined baking tray, and bake in a pre-heated oven at 375 degrees C.

You can eat the dough! I try to avoid this as much as I can, but sometimes you just gotta sneak a taste test here and there!

Can you freeze Ginger Molasses Cookies?

Yes! You have a couple options here. You can either freeze the dough and defrost until almost at room temperature. OR, you can fully bake and freeze, and then throw into the oven for about 5 minutes to re-heat.

Ingredients

  • 2 cups flour
  • 1.5 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup avocado oil
  • 1-2 tbsp ginger zested
  • 3/4 cup brown sugar
  • 1/2 cup apple sauce
  • 1/4 cup molasses
  • 2 tsp vanilla extract
  • 1 tbsp flaxseeds ground
  • 1/3 cup sugar

Instructions

  • Pre-heat oven to 375 degrees C.
  • In a small bowl, combine ground flaxseeds with 2.5 tbsp of water. Set aside.
  • In a large bowl, combine flour, baking soda, cinnamon, cloves, nutmeg, salt.
  • In a stand mixer, cream oil, brown sugar, molasses, vanilla extract, zested ginger, and flax egg.
  • Roll 1-2 tablespoon sized balls of dough and cover with white sugar.
  • Place on parchment paper or silicone lined baking sheet.
  • Bake for 11 minutes.
  • Allow to cool, and enjoy!
