Ingredients ⁣⁣
⁣⁣
COOKIE BASE:⁣⁣
1 1/2 cup cashews ground⁣⁣
4 tbsp melted coconut oil⁣⁣
1/2 tsp vanilla extract⁣⁣
pinch of pink salts⁣⁣
⁣⁣
DATE CARAMEL:⁣⁣
15 pitted dates⁣⁣
pinch pink salts⁣⁣
1/4 cup filtered water⁣⁣
1/4 tsp vanilla extract⁣⁣
⁣⁣
CHOCOLATE COATING:⁣⁣
1/4 cup raw cacao powder⁣⁣
1 cup melted cacao butter⁣⁣
1 tbsp coconut sugar⁣⁣
⁣⁣
Instructions:⁣⁣
⁣⁣
1. Make the cookie by first cashews, then adding the rest of the cookie base ingredients and combine until dough forms.⁣⁣
2. Line a baking pan with waxed paper, pat dough down evenly on base of the baking pan. Freeze while making caramel.⁣⁣
3. To make the caramel; blend caramel ingredients in a high speed blender, & pour over cookie base evenly, freeze again.⁣⁣
4. Melt cacao butter over a double boiler or in a chocolate melter. Whisk in coconut sugar and cacao powder.⁣⁣
5. Meanwhile, cut cookie base/date caramel into bite size bars or whole bars (16 mini bars).⁣⁣
6. Dip mini bars or full size bars in chocolate sauce, let set then dip again until bars are completely coated.⁣⁣
7. Store in the freezer for longer storage or in the fridge for up to two weeks.⁣⁣

SUNFLOWER LENTIL BOLOGNESE⠀
⠀
1/2 medium yellow onion, diced ⠀
2 cloves garlic, crushed ⠀
1 tbsp basil ⠀
Salt and pepper to taste ⠀
28oz can diced tomatoes⠀
4oz can tomato paste⠀
1 tbsp oregano, dried ⠀
2 cups vegetable broth ⠀
1 cup lentils, washed ⠀
1 cup sunflower seeds ⠀
Fresh basil ⠀
Walnut Parmesan ⠀
⠀
Sauté onions in pan. Add garlic and spices. Add diced tomatoes and tomato paste. Add oregano, vegetable broth, lentils, and sunflower seeds. Simmer on medium heat for 25 minutes until lentils are cooked and sauce has thickened. Salt and pepper to taste. Stir often. Serve on a bed of brown rice or spaghetti. Top with basil and walnut parmesan. Enjoy! ⠀

Blake’s Peanut Butter Granola Cookies! 
1 tbsp ground flax + 2.5 tbsp water 
1/2 cup peanut butter
1/2 cup apple sauce 
3/4 cup brown sugar 
3/4 cup oat flour 
1 3/4 cups flour (sub gluten free flour)
1 1/2 tsp baking powder 
1 tsp vanilla extract
1 tsp salt 
1 cup homemade or store bought granola

Preheat oven to 350 degrees. 
Mix flax egg and let sit for a few minutes.
Mix dry ingredients.
In a stand mixer, cream flax egg, peanut butter, apple sauce, brown sugar, and vanilla extract. 
Add dry ingredients and mix until combined. Fold in granola. 
Drop 2 tbsp sizes balls onto parchment lined baking sheet. Press down with fork slightly. Bake for 12-15 minutes! (Makes 12-15 depending how much cookie dough you sampled)...

Recipe: ✽ 1 Red Bell Pepper, sliced
✽ 1 Zucchini, sliced
✽ 1/2 Onion, sliced
✽ 1 Eggplant, sliced
✽ 2 tsp Olive Oil, optional
✽ 1 tsp Garlic Powder
✽ Salt and Black Pepper to taste
✽ Lettuce (recommend romaine or butter lettuce)
✽ Tomato, sliced
✽ Sprouts
✽ Hummus
✽ Pesto
✽ Mustard, optional

METHOD
1) Preheat oven to 425 degree F prepare baking pan wi/ silicone baking mat, aluminum foil, or oil.
2) Prep, wash, slice vegetables.
3) In a large bowl, combine Bell Pepper, Zucchini, Onion, Eggplant. Coat with Olive Oil.
4) Mix in Garlic Powder, Salt, and Black Pepper.
5) Spread vegetables evenly on baking pan.
6) Bake for 30-35 mins until vegetables are
browned and tender.
7) Start assembling the sandwich with two slices of bread, spread hummus on one side and pesto on the other. Start to layer sandwich with Lettuce, Tomato, Roasted Vegetables, then Sprouts.
