Preheat oven to 350 degrees F
Add apple cider vinegar to almond milk and set aside.
In a stand mixer, cream melted coconut oil, avocado, apple sauce, and sugar.
In a large bowl, combine all dry ingredients. (Including espresso, if using)
Add dry ingredients, and apple cider vinegar to the mixer, and mix until combined.
Add the boiling water and mix until the mixture is blended and shiny.
In a square 8-9inch pan lined with parchment or sprayed with coconut oil, add mixture and bake for about 60 minutes until a toothpick inserted comes out dry.
